Rogan Josh

Rogan Josh is one of the most famous lamb dishes from Kashmir in Northern India.
This slow-simmered curry is known for its rich red colour, warming spices, and deeply comforting flavour.
Our version uses lamb simmered with garlic, ginger, tomatoes, yogurt, paprika, cardamom, cinnamon, and cloves until tender.
Served with rice or naan, it is the kind of dish that tastes even better the next day.

Ingredients
2 lbs lamb shoulder, cubed
2 tbsp oil
1 onion, diced
4 garlic cloves, minced
1 tbsp ginger, grated
1 cup plain yogurt
1 tbsp paprika
1 tsp cumin
1 tsp garam masala
1/2 tsp cinnamon
1 cup crushed tomatoes
Salt to taste

Instructions
Heat oil and cook onions until golden.
Add garlic and ginger.
Brown the lamb pieces.
Stir in spices.
Add yogurt and tomatoes.
Simmer covered for 1.5 to 2 hours until tender.
Serve with rice or naan.
