This herb-crusted rack of lamb uses rosemary, thyme, parsley, garlic, Dijon mustard, and breadcrumbs tocreate a crisp, flavourful crust while keeping the inside tender and juicy.

Ingredients
1 rack of lamb
2 tbsp Dijon mustard
2 garlic cloves, minced
1 tbsp rosemary, chopped
1 tbsp thyme
1/2 cup breadcrumbs
2 tbsp olive oil
Salt and pepper

Instructions
Preheat oven to 400°F.
Season lamb with salt and pepper.
Brush with Dijon mustard.
Mix breadcrumbs, garlic, rosemary, thyme, and olive oil.
Press mixture onto lamb.
Roast for 25 to 30 minutes.
Rest before slicing.
