New Zealand Herb-Crusted Lamb

New Zealand is known around the world for high-quality lamb and simple cooking styles that highlight the natural flavour of the meat.


This herb-crusted rack of lamb uses rosemary, thyme, parsley, garlic, Dijon mustard, and breadcrumbs tocreate a crisp, flavourful crust while keeping the inside tender and juicy.


It is elegant enough for a holiday dinner but simple enough for a weekend meal.

Ingredients
1 rack of lamb
2 tbsp Dijon mustard
2 garlic cloves, minced
1 tbsp rosemary, chopped
1 tbsp thyme
1/2 cup breadcrumbs
2 tbsp olive oil
Salt and pepper

Instructions
Preheat oven to 400°F.
Season lamb with salt and pepper.
Brush with Dijon mustard.
Mix breadcrumbs, garlic, rosemary, thyme, and olive oil.
Press mixture onto lamb.
Roast for 25 to 30 minutes.
Rest before slicing.
