Ingredients
2 lbs lamb shoulder, cubed
4 potatoes, chopped
3 carrots, sliced
1 onion, diced
4 cups beef broth
1 tbsp thyme
Salt and pepper
Instructions
Brown lamb in a large pot.
Add onions and cook until softened.
Add carrots, potatoes, broth, and thyme.
Simmer for 2 hours until lamb is tender.
