Description

Elevate your Chermoula Lamb Skewers by pairing them with this heirloom tomato & field cucumber salad.


Ingredients

Chermoula Lamb Skewers

1 large bunch of parsley – ( yielding 1 cup)

1 cup – Olive oil

2 tbsp – Ground cumin

2 tbsp – Ground coriander

2 tbsp – Sweet paprika

2 tsp – Ground ancho chilli

2 tsp – Smoked paprika

2 tsp – Crushed chilli flakes

4 tsp – Kosher salt

1 tsp – Cracked black pepper

2.25 lbs – Diced Ontario lamb

Heirloom Tomato & Field Cucumber Salad:

6 large heirloom tomatoes

1 pint multicoloured cherry tomatoes

6 mini cucumbers

1 lemon

1/4 cup white wine vinegar

1/2 cup olive oil

1 bunch of chives

1 tsp kosher salt

1/2 tsp cracked black pepper


Instructions

Chermoula Lamb Skewers

• Thoroughly mix all of the spices together
• Finely chop the parsley & place in a mixing bowl
• Add the spice mixture
• Add olive oil & incorporate
• Add Ontario lamb to the chermoula & mix until the lamb is well coated
• Carefully put lamb onto the skewers
• Refrigerate & allow to marinate for a minimum 1 hour or up to overnight
• Remove skewers 30 mins before grilling
• Pre heat grill
• Once grill is hot pat off any excess oil & grill skewers for 6-8 mins on each side

 

Heirloom Tomato & Field Cucumber Salad

• Cut the heirloom tomatoes into small wedges removing the cores & place in mixing bowl
• Half the cherry tomatoes & add to mixing bowl
• Half the cucumbers & finely slice on the bias, add to tomatoes
• Finely slice the chives & add to the mixing bowl
• Zest & juice the lemon add to the salad mixture as well as the white vinegar & olive oil
• Season with salt & pepper & thoroughly mix
