Description
Wow your BBQ guests by pairing your fresh Ontario Lamb with this Peach & Mint Chimichurri sauce.
Ingredients
3 – large ripe peaches
4 – small shallots
4 – cloves garlic
1 – medium Anaheim chili pepper
3 – limes, zested & juiced
1 – bunch of parsley (yielding 1 cup)
1.5 – bunches of mint (yielding 1/2 cup)
1 – bunch of chives (yielding 1/4 cup)
1/2 – bunch of cilantro (yielding 1/4 cup)
1/2 – bunch of oregano (yielding 1/3 cup)
1 tbsp – ground cumin
1 tbsp – ground coriander
1 tsp – crushed chilli flakes
2 tsp – kosher salt
1/2 tsp – cracked black pepper
1 cup – olive oil
1/4 cup – white wine vinegar
Lamb Chops
20 – Ontario lamb rib chops (can substitute for other cuts of lamb)
Kosher salt
Crack black pepper
Instructions
Peach & Mint Chimichurri
• Finely chop all of the herbs, leaves & stems. Place in a mixing bowl
• Mince the garlic & shallots, add to the herb mixture
• Deseed the Anaheim pepper finely dice, add to the mixing bowl
• Small dice the peaches & discard the pits, add peach to the mixing bowl
• Zest the limes in to the mixing bowl & then add the juice
• Add the spices, salt & pepper, mix thoroughly
• Incorporate the white wine vinegar & olive oil’
Grilled Lamb Chops:
• Pre heat grill
• Remove lamb from fridge 30 mins before grilling
• Season the lamb chops generously with salt & pepper on both sides
• Grill for 3-6 mins on each side
